Celery and peanut butter! Some people do not like celery but you will have other options at the party. You can individually butter each piece of celery or you can do it like chips and dip (which is quicker. Just stick a platter of celery out and a bowl of peanut butter.
If you cannot stand the thought of not having chips at your party then grab some low sodium corn chips. There are also organic dips that work well. If you want to stick with a low sodium theme then look for low sodium dips that go well with your chips.
There is nothing wrong with some sliced apples. What is good about sliced apples is that people can dip it in the slices in peanut butter too (so the peanut butter doubles for the celery and apples). this helps provide variety while keeping the "chip and dip" effect.
If you are more concerned with time, grab a vegetable platter from your local grocery store. You can provide sour cream, ranch dressing, thousand island dressing, and blue cheese dressing. This is simple and clean and grocery stores are rarely out of vegetable platters. Also, get a fruit tray if that is what you would prefer.
Grab some Wheat Thins! These are in a chip-type form of snacks. These can be dipped in any of the dressings, including the peanut butter. Wheat Thins are a nice filler and are great for any children who are at the party. You can keep some thin slices of cheese for the Wheat Thins. The cheese adds some dairy to the snacks.
Now you are thinking: "What about the drinks?" Fix some lemonade! It's better than beer or other alcoholic drinks and depending on how much sugar you put in it, it is healthier than all sodas. If you have kids, make some Koolade but keep the sugar low or substitute stevia for the sugar.
For something more substantial you can use deli sandwiches. Use whole wheat bread for the sandwiches to keep them healthy. Do not overload the sandwiches with too much meat and mayo. You can put cheese on these sandwiches also but watch how much you use.
