Quick and Healthy Vegan Snacks for Kids

Whether your kids have been raised on a vegan diet or you've recently made the switch to eating vegan, you're quite possibly in need of some quick and healthy vegan snacks that your kids will enjoy.

I've compiled some quick and healthy vegan snack recipes for kids using many of the ingredients we all have in our household. These recipes taste great and are not only for kids, the adults will love them to.

Recipe # 1: Baked Whole Wheat Tortilla Crisps and Bean Dip.

For this recipe all you need is: 4 whole wheat flour tortillas, one 16 oz can of refried beans and ½ cup Pace chunky mild salsa.

Directions: Preheat the oven to 350 degrees Fahrenheit. While the oven is preheating, stack the whole wheat tortillas on top of each other and, using a pizza cutter, slice into wedges.

Once the oven is preheated place the tortilla wedges in a single layer on a baking sheet (Use two if you need more room). Set the timer for eight minutes. When the timer goes off, check to see that the tortilla wedges are crisp, if they're still soft, bake for an additional 2 minutes, checking on them every 30 seconds to make sure they do not burn.

While the Tortilla wedges are baking, heat the refried beans in the microwave for 2 minutes, stirring every 30 seconds. Once the beans have finished heating, mix in ½ cup Pace chunky mild salsa.

Serve the baked whole wheat tortilla crisps with the bean dip for a delicious, quick and healthy vegan snack.

Makes 4 servings.

Recipe #2: Toasted Peanut Butter and Jelly Squares with banana wheels.

When you're really short on time or just don't feel like spending a lot of time in the kitchen, this is one extremely quick and healthy snack for kids.

All you need is whole wheat vegan bread such as Arnold's Stone Ground Whole Wheat Bread or Cobblestone Mill Whole Wheat Bread, all natural peanut butter such as Krema brand, all natural jam such as Polaner All Fruit, and one banana.

Directions: Simply toast bread to desired crunchiness, spread with 1 TBS Polaner All Fruit and 1 - 2 TBS All natural peanut butter.

Before putting the slices of bread together, peel the banana and slice it into pieces. Place six slices of the banana on the bread with the peanut butter in two rows.

Now, place the slice of bread with the jam on top of the bread with the peanut butter and banana. Cut the sandwich into six bite size pieces, each piece having one of the banana slices in it.

Serve on a plate or napkin for a super quick and healthy vegan snack kids will love.

Recipe #3: Creamy strawberry banana popsicles.

This kid friendly vegan snack is not only delicious but will help keep the kids cool in the summer heat or satisfy a sweet tooth any time of year.

What you'll need is, 1 cup of light soy milk, 2 bananas, and 1 cup strawberries.

Directions: Chop the bananas into 5 chunks each, and chop the strawberries in half to make 1 cup.

Measure 1 cup of light soy milk and poor into a blender. Add the chopped bananas and strawberries. Blend all the ingredients.

Poor into an ice cube tray or Popsicle making tray and freeze for 45 minutes. Insert Popsicle sticks and allow to freeze for an additional 1 hour and 15 minutes (time may vary depending on how cold the freezer).

Serve and enjoy.

Recipe #4: Baked Potato Wedges.

What you'll need for this recipe is two large potatoes, chili powder, all purpose seasoning, and black pepper.

Directions: Preheat oven to 400 degrees Fahrenheit.

Scrub the potatoes and place them on a cutting board. Cut the potatoes, length wise, into eight wedges each.

Place the potato wedges in a large bowl. Sprinkle 1 tsp chili powder, 1 tsp all purpose seasoning, and ½ tsp black pepper over the potatoes and mix them up. Make sure the seasonings are evenly distributed over potato wedges.

Place the seasoned potato wedges in a single layer on a baking sheet. Bake for 30 minutes.

This is a wonderfully quick and healthy vegan snack for kids. Serve with ketchup or BBQ sauce.

Makes 4 servings.
