Uses Pudding Mix Instead of Chocolate Chips

Many years ago I discovered this recipe which I thought was wonderful. I was out of chocolate chips and craving chocolate peanuts, so tried it out. The nice thing about it is that you can use other flavors of pudding mix and other kinds of nuts to suit your taste. It's also good to use butterscotch pudding mix and substitute coconut for the nuts to make "haystacks." Just be sure NOT to use instant pudding mix. I tried it and believe me when I say it doesn't work.

Recipe:

1 small package pudding mix (NOT INSTANT)
1 cup sugar
1/2 cup evaporated milk
1 tablespoon butter
1 cup small salted peanuts

In a heavy 1 1/2 quart saucepan mix well the pudding mix, sugar, and evaporated milk. Cook and stir to a full, all-over boil. Lower heat and boil slowly for 3 minutes, stirring constantly. Take off heat. Without stirring, add butter and let cool 10 minutes. Then stir until mixture is very thick. Stir in peanuts. With 2 teaspoons, drop candy quickly onto waxed paper. If candy becomes too stiff to drop easily, stir in a few drops of condensed milk. Let cool until set. Makes about 24 clusters.

    These sound easy and delicious. I'll be sure to get the type of pudding you cook instead of instant. I've made that mistake with other things, and they didn't turn out good!
