If you need a meal in a hurry, and have at least twenty minutes, here is one you have got to try. The only thing is that you are required to have a taste for mushrooms.

Wild-Mushroom Stroganoff (4 servings)
Ingredients: 1 Tbsp. extra-virgin olive oil, 1 medium-size yellow onion (diced), 1 cup quartered baby portabello mushrooms, 1 cup quartered shiitake mushrooms, 1 cup quartered button mushrooms, 1 Tbsp. whole-wheat pastry flour, 1 can mushroom gravy (Campbell's), 1 cup vegetable stock, 1/2 cup sour cream, 1 Tbsp. ground mustard, 1/4 cup chopped parsley
How-To Make: First, heat the oil and saute the onion and mushrooms. Sprinkle the flour in with it all and cook to a paste. Then you add the gravy and the vegetable stock and let it simmer for twenty minutes. Next you mix the sour cream and the mustard together, and you then pour it into the gravy mix and let it heat. After all is finished cooking garnish it with parsley and serve!

What is a stroganoff without a side? A creamy potato salad would be great to go with that wild-mushroom stroganoff. This only takes another twenty minutes to make. If you are in a large kitchen you could make it at the same time as your main course, so the whole meal would only take twenty minutes to make!

Creamy Potato Salad (4-6 servings)
Ingredients: 6 medium sized potatoes, 1/2 cup mayonnaise, 1/4 cup yellow mustard, 2 Tbsp. distilled white vinegar, 1/2 chopped onion, 1/2 cup chopped celery, salt and pepper or paprika to taste
How-To Make: Cut the whole potatoes into cubes and cook them in boiling water for twenty minutes. Then drain them and let them cool completely. In a large bowl you then combine them with the remaining ingredients. For the optional taste, put the salt and pepper of paprika on top and then serve and enjoy.

These recipes are quick and easy to make. They are perfect for a family that is always busy and short of time. With the short amount of time required to make this meal, it will leave you and your family or friends with extra time to sit and enjoy the meal and talk with each other, or sit in front of the television, which ever you prefer.
