At no other time of year is comfort food more inviting than in winter, especially winter in New England. Well, unless you have had a nasty breakup or a fight with your best friend, then comfort food is good any time of year. After shoveling out from a blizzard, I love sitting down to a hearty dish of shredded potato ham pie. It is a great winter treat. Try this quick prep recipe using fresh or leftover ham.

The Versatility of Potato Ham Pie

This easy dish is so versatile; you will wonder how you made it to a potluck supper without it all these years. Simply double the ingredients to feed a crowd. In addition, it makes a great hot dish to serve company on football day. Include this dish at your Super Bowl XLV party.

Feel free to change up the cheddar cheese in the recipe with flavored cheddar that packs a punch. Try chipotle, garlic and herb or horseradish cheddar. The sky is the limit.

Also, the recipe calls for shredded potato. If you are pressed for time, you can use store-bought frozen shredded potato. Let thaw for 10 or 15 minutes before using in the recipe.

Potato Ham Pie

What You Will Need

4 eggs (slightly beaten)
1 cup frozen peas and carrots
1 cup cooked ham (chopped)
1 ½ cups shredded cheddar cheese
½-cup milk
½ teaspoon minced fresh onion
2 medium potatoes (peeled and shredded)

Cooking Directions

Preheat oven to 350 degrees. In a bowl, combine eggs, peas and carrots, ham, milk, 1 cup of the cheese and onion. Mix well. In a separate bowl, mix the shredded potatoes and the remaining ½-cup of cheese.

Using an ungreased 9-inch pie plate or 8-inch baking dish; press the potato and cheese mixture onto the bottom and sides of the plate or dish. Pour the ham filling over the potato mixture. Bake for 45 minutes. Let stand a few minutes before slicing.

Serving Ideas

In a dinner setting, serve shredded potato ham pie with a garden salad and warmed dinner rolls. As well, some chilled cranberry works nicely, too. Apple pie topped with French vanilla ice cream makes a great dessert.
