Quick Sandwich Rich in MUFA's

Here is a sandwich that is rich in MUFA's and very easy to prepare.

Chicken & Avocado Sandwich

Ingredients:

Italian Bread with Sesame Seeds

Sliced Avocadoes

Chicken Cutlet sautéed in Olive Oil

Roasted Red Pepper

To prepare: Lightly toast a 6 inch piece of Italian bread with sesame seeds. While bread is toasting, sauté a thinly cut piece of chicken cutlet in olive oil. Season with salt and pepper. When thoroughly cooked, place chicken on bread. Add 2-3 slices of avocados. Top with roasted red pepper and enjoy!

If you want to further your MUFA experience, prepare a quick salad to enjoy with your sandwich. Make sure to add lots of olives, canola or olive oil and sunflower seeds. They are very high in MUFA's as well.
