This is a simple recipe that my mother-in-law used to make. It's economical and most children love it too. This recipe is good for sharing at the family reunions and office potluck lunchs.
What you will need:
A 9x13 size baking pan/dish
A 2 cup measuring cup
A spoon
Assemble the following ingredients:
2 lb. Pkg. frozen hash browns (O'Brien style are extra good)
8 oz. carton sour cream
1 stick margarine (melted)
2 cups grated Longhorn or Cheddar cheese
1 can cream of chicken soup
¼ cup chopped onion (omit if O'Brien style potatoes are used)
Salt and pepper to taste
2 cups cornflakes
Now for the quick and easy instructions:
Mix ingredients together and put into a 9 x 13 pan. Make topping of 2 cups crushed cornflakes and ¼ cup margarine (melted). Spread over potatoes and bake uncovered for one hour in a 350 degree oven.
This is a wonderful side dish for a baked chicken or ham and is received well as an addition to a potluck meal.
