Quick, Simple Football Snacks

With football season upon us, requests for drinks and snacks will start coming. Here are a couple quick, simple, but nummy snacks to go along with your favorite beverage while watching your favorite football team, hopefully win.

Pizza Melts:

English muffins split in half (quantity is determined by number of guests)

pizza sauce

shredded Mozzarella cheese( or any favorite shredded cheese)

pepperoni slices for each muffin

black olives

canned mushrooms, drained & diced

Spread the English muffin halves with the pizza sauce. Top with the remaining ingredients and broil in the oven until cheese melts and is bubbly. Remove from oven and transfer to serving platter. Enjoy!

Note: Keep an eye on these when you're broiling them, so they don't burn. I put them on the middle rack in my oven rather then the top rack so they get heated through without burning.

Reuben's in a pot:

16 oz. sauerkraut, rinsed and drained

8 oz. cream cheese

8 oz. sour cream

8 oz. shredded Swiss cheese

1 lb. shredded corned beef

Mix all ingredients in a crockpot. Simmer on low heat until heated through (approximately 90 minutes). Serve warm with pumpernickel or rye cocktail bread slices.
