Quick Substitutes for Chicken Bouillon

Chicken bouillon is a simple alternative to fresh chicken broth that can be stored for long periods of time. Many recipes call for it, since it's easy to find and keep on hand. However, chicken bouillon may not be an option in some cases. This product is usually high in sodium, making it a poor choice for people with high blood pressure. It also may contain MSG, wheat, or other ingredients that can be irritating and dangerous in sensitive people. In these cases, we need to find an alternative.

Chicken Broth

Bouillon cubes and granules are simply a convenience form of chicken broth. Canned or homemade chicken broth is often less salty and contains fewer added ingredients, such as wheat and corn flour, butter and MSG. This means that people with food sensitivities may wish to substitute broth. Use 1 cup fresh or canned broth for each bouillon cube or teaspoon of bouillon granules called for in your recipe.

Vegetable Bouillon

Vegetarians and people who are interested in reducing their meat intake can substitute vegetable bouillon for chicken in recipes. Not all vegetable bouillons are vegetarian, so be sure to read the label carefully. Vegetable and chicken bouillon cubes and granules both have relatively mild flavors. Avoid beef bouillon, which can be overpowering. Substitute vegetable bouillon for chicken bouillon in a one-to-one ratio.

Flavoring Packets

If there's no bouillon in the house, flavoring packets from ramen and other instant meals may work. Choose chicken flavored packets over beef, pork, or seafood flavors. Add the flavoring packet a little at a time, and taste the resulting dish before continuing. This is not a low-sodium solution. Use one teaspoon of flavoring powder for each teaspoon or cube of bouillon.

Low Sodium Bouillon

Conventional bouillon is inappropriate for salt-restricted diets. Substitute low-sodium bouillon instead. A teaspoon of regular bouillon granules or one bouillon cube contains approximately 900 mg of sodium. An equivalent amount of reduced-sodium bouillon contains approximately 600 mg of sodium. These products are high in potassium, which may be a problem for some. Substitute at a one-to-one ratio for conventional chicken bouillon.

Vegetarian "Chicken" Bouillon

These products use nutritional yeast to simulate a chicken flavor. They are meat free, but can contain whey and other dairy products, and may not be suitable for vegans. Some brands also contain MSG. These can be used just like other bouillons in dishes that require a chicken flavor.
