Jitu
I am going to share a very easy but healthy and tasty Indian fish recipe. This is sometimes very difficult to prepare fish at home in healthy way. We always need to make sure we eat fresh fish and cook them well. It is better to have live fish, but simultaneously it is difficult too. By following few simple precautions we can avoid the harm of having less cooked fish. Generally your recipe should be in a way so that it won't allow you to make fish in unhealthy way. Try to avoid having much sea fish. Sea fish is having mercury which is very bad for our health. Here we will make Rahu fish in a healthy way which takes all precautions into consideration while making fish.

We will use Rahu fish (Labeo Rohita is the scientific name of Rahu). Rahu is also known as Indian Carp. Rahu is a sweet water fish. It is recommended to use 1 kg (or two & half pound) of Rahu fish from a 4 to 5 kg of big Rahu fish. If the fish is big enough (at least 10 pounds) you will able to understand the real taste of Rahu fish. This Rahu fish is very popular in eastern part of India. This is one of the easiest ways to prepare fish. Here we will use mustard seed as the main ingredients. Just as a health caution, mustard seed is little rich spice and the fat quantity in mustard seed is little high. There are three types of mustard seeds available in market - black mustard seed, white or yellow mustard seed and brown mustard seed. These are all came from different types of mustard plants, but almost same in taste.

Serving: Serves 4

Time of Preparation: 40 minutes

Ingredients:
- Two and half pounds of Rahu fish
- White Mustard seed - 5 Ounces
- Green Chilli - six medium sizes
- Mustard Oil - half cup
- Yogurt - 6 Ounces
- Turmeric powder - 1 small tablespoon
- Salt to taste
- Sugar to taste

Process:
- Cut the Rahu fish into medium pieces. Make twelve pieces from two & half pound of fish. Removed the scales and wash it properly.

- Add salt, yogurt and turmeric powder to this Rahu pieces and let it marinate for one hour.

- Grind mustard seed with water and add sliced green Chilli with that mustard. During grinding the mustard seed you have to add little water so that it will become a paste. If add less water the taste of mustard seed may turn into little bitter. It is advisable to use wet mustard for grinding. You can put mustard seed under water for one hour and then grind that along with that water.

- Add mustard paste and mustard oil to the fish and let it marinate again for half an hour.

- Take one baking pan and add mustard oil.

- Set the oven temperature to 350 degree and at baking.

- Let the oven temperature reach to 350 and then put the whole thing inside for 20 mints.

- Remove the fish from oven and rearrange the fish and put the other side of the fish pieces under the gravy.

- Let the fish baked for more 20 mints.

- Remove from oven and serve hot with rice.
