Recipe: Blacken Salmon Florentine

Ingredients:
2 10oz Salmon
3 Cup Heavy Cream
1 Cup Parmesan Cheese
Crushed Red Pepper
1 Green Bell Pepper
1 Red Bell Pepper
10 oz. Spinach
1 oz. white wine
Olive oil

Blacken Spices: (One order double for more)
2 ½ TSP. Paprika
1 ½ TSP. Cayenne Pepper
½ TSP. White Pepper
½ TSP. Salt
½ TSP. Dried Oregano
½ TSP. Dried Rosemary (Fine Chopped)
½ TSP. Dried Parsley
½ TSP. Garlic Powder
½ TSP. Onion Powder

Instructions:
Mix all the spices in a bowl and damp on side (flesh side) of Salmon into the spice. Place a pan on high heat with 3 Tablespoon of olive oil. When pan is heated, place the Salmon into the pan with the spice side down. Sear for about 1-2 minutes until lightly blacken. Remove fish from pan and place in oven at 350F for approximately 10-15 minutes with the spice side up.

Julienne (long thin strips) cut the peppers. Heat another pan with 2 tablespoon of oil. Sauté the peppers and add 1oz of white wine for about 1 minute. Add 3 cups of heavy cream and cook for about 4 minutes until slightly (around half) reduced. Then add the spinach, parmesan cheese and crushed red pepper to preferred spiciness then simmer for about 1-2 minutes. You made add more cheese to your taste preferences. Remove pan from heat now your sauce is ready

Remove the Salmon when ready. Check the internal temperature and ensure it is at least 155F. Now you can enjoy the Salmon with the Florentine Sauce. Try it with my Shrimp Risotto recipe.

Suggestive Ideas:
You may add crawfish, shrimp, or crab to the sauce to enhance the plate.
