These are the ingredients that you need to have and how they should be prepared prior to cooking.
18 oz of chicken cut into small pieces
1 medium onion sliced
3 cloves of garlic chopped into small pieces
3 tbsp of olive oil
1 cup of coconut milk
1 small piece of ginger chopped into thin round slices
¼ cup of water
¾ tsp of salt
¼ tsp of black pepper
1 bundle or 5 stems of young onions cut into small pieces and each piece is about 1 inch long
1 tsp of curry powder
1 small can of pineapple chunks
Now that you have all your ingredients ready and prepared, let us go into the actual cooking.
1. The first thing you will want to do is to dissolve the 1 tsp of curry powder in the ¼ cup of water and set it to the side.
2. Next preheat a pan and put in the 3 tbsp of olive oil.
3. After you have done that, put in the chopped garlic and saute it in the olive oil. You will know it is finished when it becomes a golden brown color.
4. Next you will want to add the sliced onions to the pan and saute those as well for a couple of minutes.
5. After you have finished doing that, put in the pan the cut up chicken as well as the chopped ginger. Saute those both for a couple of minutes until you know the chicken is fully cooked.
6. Put in the ¼ cup of water with the curry powder in the pan along with the cut young onions, ¼ tsp of black pepper and the ¾ tsp of salt. Set the stove to a low setting and leave everything there for 10 minutes.
7. After 10 minutes have passed, add in the 1 cup of coconut milk along with the small can of pineapple chunks. Let everything simmer while you are constantly stirring it.
Then it will be ready to eat and it makes 3 to 4 servings. A great and simple meal that moms (even dads!) can cook for their families. Happy eating!
