Recipe for Chicken and Pork Adobo

The national dish of the Philippines is adobo. You will see it in virtually every restaurant you encounter in the Philippines. Filipinos love it and for good reason too. It's a delicious dish! They call it adobo because soy sauce and vinegar is added to the pork or chicken when cooking it. It is great for dinner or lunch and your whole family will enjoy it. It is also very affordable. I now present you with the recipe for Chicken and Pork Adobo!

These are the ingredients that you need to have and how they should be prepared prior to cooking.

8 oz of pork cut into small pieces
18 oz of chicken sliced into small pieces
1/3 cup of soy sauce
¼ cup of vinegar
½ tsp of black peppercorn
1 small pack of laurel (or bay) leaves
4 tsp of olive oil
4 cloves of garlic that has been crushed
2 medium onions that are sliced
¼ cup of water
3 medium potatoes cut into 6 pieces

Now that you have all your ingredients ready and prepared, let us go into the actual cooking.

1. Get a pan and preheat it for a bit and then add in the 4 tsp of olive oil. After you have finished doing that, add in the garlic and saute it. You will know it is finished when it turns a golden brown color.
2. Next put in the sliced onions and saute them for a couple of minutes.
3. After you have done that, put in the 8 oz of cut pork as well as the 18 oz of sliced chicken. Saute them both for a couple of minutes.
4. Next you will want to add in the ¼ cup of water, cut potatoes, 1/3 cup of soy sauce, ¼ cup of vinegar, laurel or bay leaves and the ½ tsp of black peppercorn to the pan of other ingredients. Let everything simmer for about 10 to 15 minutes. Be sure to constantly stir all the ingredients and wait until the pork becomes soft.
5. That is it! You are done! If you would like a sweet taste to it, right before you are finished, add in some pineapple chunks to the pan.

This meal can serve 7 to 8 people. It is a great dish to bring to a picnic or if you are spending a day out at the beach. It will last for awhile too due to the vinegar. Happy eating!
