Ingredients
• 2-3 pieces of chicken breast
• 3-4 avocados
• 4-5 green onions, also known as spring onions
• 1 bag tortilla chips
• 1-2 tomatoes (optional)
• 1 bag or 1 head of lettuce
• Shredded cheese (optional)
• Grape Seed Oil
• Honey Mustard salad dressing
• Salsa
Directions
1. Cut up the chicken breast into bite sized pieces. Sauté the chicken in grape seed oil. Make sure to cook thoroughly, so that none of the pieces are pink.
2. Chop up the onions and tomatoes. Slice the avocados into small pieces.
3. Break up tortilla chips into smaller pieces-ideally you would be able to find tortilla strips, but if not, tortilla chips taste just as good.
4. Combine the lettuce, chicken, avocados, tomatoes, tortilla chips, and onions together in a large bowl.
5. Mix together one to two cups of honey mustard and salsa, for the dressing.
6. Add the dressing, and then toss the salad. Sprinkle cheese on top (optional).
Fun Facts
Honey mustard salad dressing contains on average 13 grams of fat per two tablespoons, or one serving. It also contains 10 mg of cholesterol and 250 mg of sodium, according to Calorie Count. It is definitely not the healthiest salad dressing, so try to use it sparingly.
Most types of salsas are higher in sodium than honey mustard salad dressing. According to Calorie Count, salsa contains 430 mg of sodium per 100 grams. However, it is also low in saturated fat, has no cholesterol or sugar, and is high in dietary fiber, iron, magnesium, niacin, potassium, vitamin A, vitamin B6 and vitamin C.
For this recipe, any type of salsa will taste good, whether it's mild, medium, or spicy. For those of you who cannot handle spicy foods, take comfort in knowing that once the salsa is mixed with the honey mustard, it is no longer very spicy.
Raw avocados, on the other hand, are all around good. Nutrition Data writes that they are low in cholesterol and sodium, and they are a good source of dietary fiber, vitamin C, vitamin K and folate. They also contain protein, iron and calcium.
