For the Chicken and Rice
1 whole Chicken
Chicken Fat from a 1-2 chicken ( you can get this from the chicken itself, just cut of the fat from it or get from the market)
2 cups of rice( rice grains)
2 chicken stock cube
I block of ginger
1 cucumber
Coriander
3 stalk of spring onions
Salt
Pepper
Soy sauce
For the Sauce
3 red chillies
1 green chillies
2 clove of garlic
1/2 cup of chicken stock( canned chicken stock)
Pinch of salt
half cup lemon juice
Preparation:
Wash and clean the chicken with salt . Then rub salt and soy sauce on the chicken to marinate it for at least 45 minutes to 1 hour
While the Chicken is being marinated you can start preparing the following:-
Fill a pot with water with slices of ginger, spring onion, garlic and 1/3 cup of salt and 1/3 cup of ( size of pot is big enough to put in your chicken). Bring this to a boil and simmer for 30 minutes.
Now Prepare the Rice:
Wash the rice and drain out the water.
Heat up your wok, put in the chicken fat and fry the chicken fat till you get all the chicken oil from it.
Add in some ginger, and onion, fry this for 2-3 minutes then pour in the rice and fry all the ingredient together for 5 minutes, then add in 1-2 cube of chicken stock. Keep frying till you can smell the nice aroma from it. Then you can transfer the rice that you just fried to the rice cooker pot. Add 2 cups of the stock that you boiled earlier on ( this depend on how much water you need to cook your rice). Add 1 stalk spring onion and 1-2 clove of garlic. in the Leave the rice in the rice cooker for 10 minutes before turning it on( this step is optional).
Now to cook the chicken:
Use a hook to hook up your chicken, this will make it easier for you to dip the whole chicken into the stock that you boiled earlier on.
Bring the stock to a boil , then dip the chicken into the boiling stock leave it there for 2-3 minutes, then lift it back up, repeat this step for about 5 to 6 times, then leave the chicken inside the pot and simmer for 15-20 minutes till the chicken is cooked. Leave it up and leave it to cool before you start chopping it into smaller piece to serve.
Preparations for the sauce:
Blend the chillies and garlic with half cup of chicken stalk, salt n half lemon juice.
Chopped the chicken! Scoop up the rice and you are ready to serve!!
