Recipe for Chocolate Mint Silk Pie

1-1/2 cups Chocolate cookies (for crust)
1/4 cup Melted butter (for crust)
3 1-ounce squares semi-sweet chocolate
1 cup Sugar
3/4 cup Softened butter or margarine
1/2 teaspoon Peppermint extract
3 Eggs

Directions for Recipe for Chocolate Mint Silk Pie

Crust
Crush 1���ý cups chocolate cookies. (You can buy any type of chocolate cookie that you like.) Stir into the crushed chocolate cookies ���ü cup melted butter. Mix well. Press the cookie mixture into the bottom and up onto the sides of a 9-inch pie pan.

Chocolate for filling
Melt 3 x 1-ounce squares of semi-sweet chocolate in a double boiler. Allow it to cool.

Combine 1 cup sugar and ���þ cup softened butter or margarine in a mixing bowl. Beat at medium speed, making sure to scrape the sides of the bowl often, until well blended.

Finish filling
Add 3 eggs and continue beating until light and fluffy. (Remember to scrape the sides of the mixing bowl often.)

Finish pie
Spoon filling into the pie crust and place in the refrigerator. Allow it to chill for at least 3 hours before serving.
Tip
You can cover the pie with whipped cream if desired. I also like to garnish my chocolate mint silk pie with fresh chocolate mint. Consider using chocolate mint cookies, such as those sold by the Girl Scouts, for your pie crust.
