I just love tomato soup. Sometimes, however, I want something a bit heartier than can be found in a can. This hearty recipe is just perfect for those cold winter nights and warms both the body and the soul.

2 Leeks
2 Diced large onions
3 cloves Minced garlic
1 tablespoon Extra virgin olive oil
3 cups Chicken stock
2 cups Diced tomatoes
1/2 cup Minced fresh parsley
1/2 teaspoon Dried thyme
1 Bay leaf
2 teaspoons Honey

Leeks
Remove the tough green leaves and the root ends of the leeks. Cut the remainder lengthwise. Wash well to remove any dirt and grit that is often found in leeks. Then roughly chop.2

Sauté
Sauté the leeks, onions, and garlic until translucent in a 3-quart saucepan over medium heat. (About 7 minutes.)Tip
Some people like to add some soy sauce (2 teaspoons) to this soup recipe. I, however, prefer some hot sauce. Try the brand called Chalula. This is a creamy hot sauce with an excellent flavor.
