Recipe for Crockpot Cornbread Dressing

Tastes Just like the Baked Dressing Your Mother Used to Make

I have always loved the cornbread dressing my mother and most people in my part of the country make, but sometimes mine turned out too dry, or I overcooked it, or didn't have time to cook it enough. When I discovered this recipe, it was a lifesaver. It tastes like the best dressing I ever ate and cooking it is no problem at all. Sometimes I make my dressing ahead of time and refrigerate it for a day or two till time to cook it. See below.

Ingredients:
1 eight-inch pan of cornbread
8 slices day-old (or older) bread
4 beaten eggs
1 chopped medium onion
1/2 cup chopped celery
1 1/2 Tablespoon sage or poultry seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 cans cream of chicken soup
2 cans chicken broth
2 Tablespoons butter or margarine
Chopped, cooked chicken (optional, but I use lots of it)

Crumble cornbread and light bread into a large bowl. Add remaining ingredients and mix well. Pour into crockpot. Dot with margarine. Cover and cook on high for 2 1/2 hours or on low for 3 to 4 hours. I prefer the lower temperature, as the dressing will be less likely to stick to the crockpot. Makes about 16 servings.Dressing will stay warm in the crockpot (even with it turned off) for quite a long time if you keep it covered.

    I;m not sure what a 8inch pan of cornbread is? The only way I know to do cornbread is in a iron skillet with bacon grease.... But with 6 grandkids(three 5yr olds) crockpot sounds real good. Thanks,this will free up one of the ovens for more sweets.ha
