Recipe of the Day for October 16, 2007- Butterscotch Cornflake Cookies

Butterscotch Cornflake Cookies

Preparation time: 5 minutes
Total time: 15 minutes
Serves: Makes about 40 cookies


Ingredients

1/2 cup peanut butter
1 package butterscotch morsels
6 cups cornflakes

Directions

In a microwave safe bowl, mix peanut butter and butterscotch morsels. Microwave on low heat to melt or melt over double boiler until smooth and creamy. Pour cornflakes in a large bowl. Slowly pour peanut butter and butterscotch mixture into the cornflakes, mixing as you go. Once mixed well, drop by teaspoon onto waxed paper. Place in refrigerator to cool. Store in covered container in the refrigerator.

If you like, add chopped nuts to the mixture. Give these cookies to your neighbors and loved ones to show them how much you appreciate them!

    I guess this is late for the person who asked but it looks like a regular package of the chips is 11 ounces or 312 grams.

    Can you please give accurate amounts for ingredients ie. how much is in a packet of butterscotch chips??? I live in a country that does not sell choc or butterscotch chips, but I would like to substitute with the correct quantity of dark chocolate.
