Recipe of the Day for October 8, 2007- Thai Peanut Chicken

This is an Easy and Unique Dish for Any Night of the Week!

Thai Peanut Chicken

Preparation Time: 15 minutes
Total Time: 35 minutes
Servings: About 4-5

Ingredients
1/4 cup Catalina dressing (or more to taste)
1 lb. boneless, skinless chicken breast, cut into bite-sized pieces
1 can chicken broth
2 tbs. soy sauce
1-2 tbs. peanut butter (to taste)
1/2 lb. whole wheat, thin spaghetti
2 cups Sugar Snap Peas or Broccoli
1 cup thin carrot slices
1/4 cup chopped peanuts

HEAT 2 Tbsp. of the dressing in large skillet on medium heat. Add chicken; cook and stir 5 min. or until cooked through.

ADD remaining 2 Tbsp. dressing, 1-1/2 cups water, chicken broth, soy sauce and peanut butter; mix well. Bring to a boil. Add spaghetti; cover. Reduce heat to medium-low; simmer 5 min.

STIR in broccoli and/or sugar snap peas and carrots; cover. Simmer 5 to 7 min. or until spaghetti is tender. Top with chopped peanuts. Serve immediately.

Alternate Cooking Instructions:
You can also cook the noodles separate from the chicken, veggies, and sauce. Then mix together when the noodles are done. This results in a thicker, richer sauce.

You can personalize this recipe to your taste. Choose your favorite noodles such as angel hair, rice noodles, egg noodles, etc. You can also add other vegetables if you like. This dish can also be served chilled.
