½ cup water
1 tsp. almond or vanilla extract
1 TBS cocoa
1 pkg (about 7 oz. or 2 cups ) Flaked coconut
Heat your oven to 350 degrees.
Cover cookie sheet with aluminum foil.
Beat cake mix with water and extract in a large bowl on low speed on a mixer for 30 seconds. Then beat on medium speed for one minute, scraping bowl occasionally. Fold in the coconut and drop half of the mixture by teaspoonsful 3 inches apart onto the aluminum foil
Bake 7 to 9 minutes or until edges turn lightly golden brown. Cool completely on the paper.
For the rest of the batter, add the cocoa to the other half and bake the same as the first batch. Cool on paper.
Makes about four dozen cookies.
Each cookie has 60 calories....1 gram fat .... 1 gram saturated fat .... No cholestrol .... 60 mg of sodium

Thanks for all the nice comments. My hubby has been in bad shape in and out of the hospital, so I haven't been around much. That going back and forth to the hospital keeps me pretty well done in. I miss you all though. Hugs Robbie

These sound delicious!
You know, that actually sounds good, even without lots of sugar and fat. Do you know if it would work okay without the cocoa? Or is it just for a little flavor? Doesn't sound like it would be enough to make it really chocolate.
