Recipe: Easy Enchilada Skillet Dinner

This Mexican Style Recipe is Easy and Flexible

If you are looking for a quick, easy Mexican style dish, here is one I know you will enjoy. You can have a tasty dinner on the table in about 20 minutes, with only one pan to wash afterwards. This recipe also doubles quite easily for a potluck or for those times when unexpected guests arrive. Serve it as is, or dress it up with extras like guacamole, black olives, or whatever suits your family.

Ingredients:

1 lb. ground beef
1 medium onion, chopped
1 - 10-oz can enchilada sauce
1 - 12-oz. bag tortilla chips
½ lb. shredded cheddar cheese (or Mexican blend shredded cheese, if preferred)

Optional:

1 8-oz can or tub of guacamole
½ c. sour cream
1 small can sliced or chopped black olives
1 small can sliced jalapenos

Directions:

1. Crumble ground beef into medium size skillet, add chopped onion.

2. Lightly brown ground beef and onion mixture. Drain, return to pan.

3. Add enchilada sauce. Heat mixture to a simmer over low heat. (If desired, add a few jalapeno slices to the mixture to add more spice.)

4. Immediately before serving, crumble approximately half of the bag of tortilla chips into the mixture and stir.

5. Continue to simmer on low heat until most of the moisture has been absorbed. Remove from heat.

6. Just before serving, crumble remaining tortilla chips on mixture, sprinkle with shredded cheese. Do not stir.

Optional: Garnish with sour cream, guacamole, chopped or sliced olives, or slices of jalapeno if desired.
