Recipe: Favorite Vegetarian Mixed Bean Soup

This is a really easy recipe that just takes a little bit of preparation, but very little effort.

Soak mixed dried beans over night. Strain and rinse them well. Then, place the beans in a crock pot and add water, about an inch or so from the top.

Add chili powder to taste.

1 large onion chopped (optional)

Add sea salt to taste.

Serve with rice and tortillas.

Add plenty of Louisiana, Valentina or Tabasco sauce for more fire power!

Refrigerate or freeze left overs. This soup is even better the second time around.

This is an excellent recipe for people on the go who don't really have time to cook. It's inexpensive and it's a great recipe to serve your vegetarian friends. They will thank you!
