These are the ingredients that you need to have and how they should be prepared prior to cooking.
35 oz of your desired fish and be sure to take out the bones and cut it into small pieces
1 tsp of black pepper
1 tsp of salt
2 medium potatoes chopped into small pieces
2 medium carrots chopped into small pieces
5 cloves of garlic chopped into small pieces
2 medium onions chopped into small pieces
3 tbsp of olive oil to saute with
1 cup of olive oil to fry the lumpia with
1 package of lumpia wrappers (cut all 50 wrappers into 2 sections each)
½ cup of raisins
2 egg whites which will be used to close the wrappers
Now that you have all your ingredients ready and prepared, let us go into the actual cooking.
1. The first thing you want to do is to boil the chopped potatoes along with the carrots. Set it to the side.
2. Next fry up the 35 oz of your desired fish. When it is done, set it to the side as well.
3. Then you will want to get a pan and preheat it. Add in the 3 tbsp of olive oil. Next put in the chopped garlic and saute it. You will know it is finished when it turns a golden brown color.
4. Next put in the chopped onions and saute those too.
5. In a container, put in the 35 oz of fish, the ½ cup of raisins, potatoes, carrots, 1 tsp of black pepper, the 1 tsp of salt as well as the sauteed garlic and onions. Mix everything together well.
6. Put sections of the mix into lumpia wrappers. Then for each one, use the egg whites to close the wrapper. Do this for all of them until you are finished.
7. Finally fry up the lumpia in the 1 cup of olive oil. You will know the lumpia is finished when it turns a golden brown color.
You can serve this with ketchup (or banana ketchup which is delicious) or a sauce recipe that you can use below.
1/8 cup of soy sauce
1/8 cup of vinegar
3 cloves of garlic that has been chopped into small pieces
1 medium onion that has been chopped into small pieces
½ tsp of black pepper
Mix everything in a container and then it will be ready to be served. This sauce makes 7 to 8 servings.
