Recipe for the Filipino Dish Known as Pinakbet

This is a main dish of many Filipinos. It originated in a province in the Philippines where the place was very rich in vegetables. It is a great healthy meal for anyone to enjoy. Here is the recipe for the Filipino dish known as Pinakbet!

These are the ingredients that you need to have and how they should be prepared prior to cooking.

2 eggplants that are cut into 2 inch circles
5 oz of pork
5 string beans that have been each cut 4 to 5 inches
18 oz of squash cut into cubes
5 pieces of okra cut into 2 pieces each
1 small bitter melon (cut in half and remove the seeds along with the white soft area inside of it)
2 tbsp of shrimp sauce (bagoong)
1 medium onion that has been chopped into small pieces
3 cloves of garlic that has been crushed
2 tbsp of margarine or olive oil
2/3 cups of water
½ tsp of salt
2 tbsp of fish sauce
2 tomatoes cut into small pieces

Now that you have all your ingredients ready and prepared, let us go into the actual cooking.

1. Set your stove to a medium setting. Get a pan and preheat it for a couple of minutes.
2. When the pan has already been heated, put in the 2 tbsp of margarine or olive oil and wait another couple of minutes.
3. After you have done that, add in the crushed garlic. Saute the garlic and you will know it is finished when it turns a golden brown color.
4. When you are finished with that, add in the onions and saute those as well for a couple of minutes with the garlic that is already in the pan.
5. Put in the tomatoes and saute them for a few minutes.
6. Add in the 5 oz of pork and saute that as well for a couple of minutes.
7. After you have finished with that, put in the 2/3 cups of water and let everything simmer for about 5 minutes.
8. Next put in the bitter melon, okra and eggplant and let everything simmer for another 5 minutes.
9. Then you will want to put in the squash along with the string beans and let everything simmer for 5 more minutes.
10. Add in the ½ tsp of salt, 2 tbsp of fish sauce and the 2 tbsp of shrimp sauce. Simmer and then turn the stove off.

3 cloves of garlic
5 ounces of baby shrimp
1 medium onion chopped
½ of a tomato chopped
2/3 cup of water
2 ounces of pork
3 tbsp of virgin oil

1. Set your stove to a medium setting and heat up a pan for a couple of minutes.
2. After you have finished that, add the 3 tbsp of virgin oil to the pan and wait for another couple of minutes.
3. Next, add in the 3 cloves of garlic. Saute it and you will known it is finished when the garlic turns a golden brown color.
4. Then add in the chopped onion and saute it with the garlic for a couple of minutes.
5. Next put in the chopped tomato and saute it.
6. Add in the 2 ounces of pork and saute that as well.
7. Finally, add in the 2/3 cup of water as well as the 5 ounces of shrimp. Let everything sit there for 15 minutes in order for the pork to soften.

This recipe makes 3 to 4 servings. A great veggie recipe. Enjoy!

    I would like to thank you for this website because I am an American but I want to continue to cook Filipino foods for my family since my husband is a Filipino. I recently was asked to cook pinakbet and had no idea what it included and now I do.
