Recipe for Fish Pilau

Ingredients
I kg fish fillet
4 tomatoes (ripe)
2 table (tbsp) tomato paste
1 ½ tbsp ground pilau mix
4 large grated carrots
1 bunch dhania
4 cloves garlic
1 medium sized freshly pounded ginger
1 kg rice
I medium sized onion
Enough oil for shallow frying the fish
I cup coconut milk

Method
-Cut the fish into medium sized cubes
-Coat with seasoned flour (flour mixed with salt and pepper)
-Fry until golden brown and quite crisp
-Fry the chopped onions, crushed garlic and ginger until brown
-Add tomatoes, cook until tender
-Add tomato paste, pilau mix and grated carrots
-Add the rice
-Add three cups of water and one cup of coconut milk
-Let it boil
-Add the fish fillets
-Cook until water is almost dry
-Reduce heat
-Cook until completely dry
-Serve hot with tomato salad
