Recipe: Herb Roasted Chicken

Ingredients:
1 Bag of Chicken Leg quarters (skin on)
2 lbs unsalted butter
1/4 cup fresh chopped Parsley (may use dried)
1/4 cup fresh chopped Oregano (may use dried)
1 Tbs. Fresh Rosemary (may use dried)
1 Tsp. Cayenne Pepper
1 Tsp. Salt
1 Tsp. White Pepper
1 Tsp. Onion Powder
1 Tsp. Garlic Salt (May use fresh chopped garlic)

Making the Rub
Leave butter out in room temperature for about 1 hour or until soft. In a large bowl add butter, parsley, oregano, rosemary, cayenne, salt, pepper, onion, and garlic salt. With hands mix ingredients thoroughly. Your rub for the chicken is ready.

Prepare the Chicken
Separate skin on chicken with fingers and hand. Do not remove the skin. Now insert the butter mixture in between the skin and meat on all sides. Rub a little butter on top of the skin as well. Refrigerate for a minimum of 3 hours.

Preheat oven at 350F. Place the chicken on a pan where the juices will not leak to the bottom of the oven. Cook for about 20-30 minutes or until internal temperature has reach 165F and enjoy.
