Recipe: Joshua Rice

This is My Husband's Favorite Rice and I Created it Just for Him

My husband likes Indian food and other spicy dishes. But this morning I couldn't find the curry powder he likes so much but I had already boiled the water and rice so I had to do something. I added to five cups of water and just over one cup of white rice the following in a heavy stainless steel four quart pan:

1/4 teaspoon of cumin
1/4 teaspoon of garlic and pepper spice
one very small white onion diced (1/2 cup)
3 bay leaves on top
1 and 1/2 tablespoons of salted butter
1/2 teaspoon salt
4 shakes red pepper flakes
fresh squeezed lime juice
(approximately 1 teaspoon)

You can certainly substitute olive oil for the butter but I wouldn't leave out the oil completely. Cover and simmer at low least after the first boil. Listen to the bubbling until you can't hear any water circulating. Turn off and stir briefly. Let remaining steam cook rice completely. Let stand at least 20 additional minutes before serving/

All rice is good for you. Don't think brown rice is the only healtful option.
