Try this healthy and delicious food Palak Bhurji you will enjoy its excellent taste.
Ingredients required:
1 bunch spinach (1/2 kg)
Thinly sliced ginger pieces
Chopped coriander leaves
3-4 green chilies
Crushed cottage cheese (paneer)
2 table-spoon oil (Mustard oil or any other oil which you use for cooking)
1 tea-spoon ginger paste
4 tea-spoon garlic paste
1 tea-spoon cumin powder
2-3 big cubes butter
2-3 chopped tomatoes
1-2 tea-spoon red chilies powder (If u like it hot, otherwise, ignore)
1 tea-spoon coriander powder
2 chopped onions
Time required: 15-20 minutes
Method for cooking delicious Palak bhurji:
1st preparation- Spinach (Palak) roasting:
Chop the spinach. Heat oil in a cooking vessel and add 2 tea-spoon chopped garlic paste, chopped spinach, and salt as per taste, and cook for some time. You will see spinach will leave water, fry it well until dry.
2nd preparation- Fresh Tomato paste:
Heat cooking oil (1 table-spoon) in a pan and add fresh ginger paste, garlic paste and sauté the mixed paste in a low flame. Once it turns brown, add 2-3 finely chopped tomatoes, 1 tsp. coriander powder, and 1 tsp. cumin powder. Cook for 5-10 minutes in a low flame.
For final preparation of Palak Bhurji
In a pan add butter, chopped onions and sauté until nice and glossy. Then add spinach (1st preparation), tomato paste (2nd preparation), salt as per taste, crushed cottage cheese (Paneer), coriander leaves, and green chilies, and cook for some more time .Garnish with 3-4 thinly sliced ginger and serve it hot. It has robust and amazing flavor.
Recipe for Mixed Greens Salad
Generally people have a wrong notion salad that is only for weight loss, and it has to be only cold salad. It can be hot, and believe me, don't get judgmental about salad.
For the salad:
Cottage cheese (paneer): (50 Gms.)
1 bowl of mixed greens (Iceberg, Lolo, Rossa, Rocula or any other kind of lettuce)
Roasted pine nuts: (1 tsp.)
Fresh chopped mints: (1 tsp.)
Chopped fresh oregano: (1 tsp.)
Finely chopped onions: (1 tsp.)
Finely chopped tomatoes: (1 tsp.)
½ cup peeled orange sections or peeled sweet lime
Lemon juice: (1 tsp.)
1 pinch of mustard powder
Salt
Pepper for seasoning
Method:-
In a salad bowl mix all the greens, some onions, and chopped tomatoes. Sprinkle oregano, fresh chopped mint, and roasted pine nuts. Top it with orange pieces and pour the dressing on the salad and serve. Play with the textures and colors of the leaves, and enjoy the yummy taste.
For the dressing: In a bowl, mix all the ingredients for the dressing (orange juice, chopped mint, chopped oregano, and salt) till you get a thick consistency.
Note: For the low calorie cheeses don't use hard cheese, use cottage cheese made of skimmed milk as they are low fat soft cheese.
