Recipe for Mom's Fried Rice

This is a Healthy, Quick Way to Use Leftover Rice, Veggies, and Meat

This is my Mother's version of Fried Rice. It's one of my Dad's favorites, and I definitely agree with him. Very easy to make, and surprisingly good. It also turns out to be quite healthy, except for a fairly high sodium content.

What You'll Need

3 oz. onion, diced
2 oz. bell pepper, diced
2 oz. celery, finely diced
2 eggs
4 oz. cooked ham, diced
2 cups of cooked Jasmine rice, preferable cooled
2 tblsp soy sauce
Salt and pepper to taste
2 tsp. oil

What To Do

Heat the oil in a large non-stick skillet.

Saute' the veggies for a minute of two then move them to the edges of the pan. This makes room to cook the eggs.

Scramble eggs then mix in the veggies.

Reduce the heat a bit and add the rice. Stir for 2 or three minutes to heat and separate the rice.

Add the cooked ham. Cooked chicken, shrimp or other leftovers would also be good.

Add the soy sauce. Enough for a nice golden color and good taste.

Stir, cook for another minute or two, then eat!
