The ingredients you will need for this recipe are a spray bottle of olive oil,
1 cup of oat bran. You can use the cereal oat bran if you choose too
one half cup of whole wheat flour
half a cup of sugar
1 teaspoon baking powder
half a teaspoon baking soda
pinch of salt
two cups of butter milk
two eggs.
In a large bowl combine the oat bran, flour, sugar, baking powder, baking soda, and salt and set it aside.
Then take the butter milk and the eggs in a small bowl and beat them together till well blended. After the egg and the butter milk are blended together well pour the mixture over the flour mix. Stir the ingredients together until they are well blended and there are no lumps in the batter.
Take a fry pan, preferably an iron fry pan, and heat it on a medium heating. When the pan is hot spray a layer of the olive oil into the pan and pour approximately a half cup of batter into the hot fry pan. Now you should have a pancake frying in a iron pan. Let the pancake cook until it is puffy and little bubbles start to form on the top of the pancake. When the pancakes is puffy and bubbly take a spatula and gently flip the pancake. Cook the pancake on the other side for a minute or so and then flip it again to make sure the pancake is done. If the pancake looks done take the pancake out of the pan and put it on a plate.
These pancakes taste great with maple syrup or the jelly of your choice on it. If you prefer try these pancakes with butter and sugar on the top or you can even try to eat them with corn syrup on top. This recipe can make 10 to 12 pancakes.
