I'm not crazy about eggnog; however, my mother loved it. This recipe is for her.

Ingredients

Serves 5
1/2 cup Powdered sugar
4 Eggs
1/4 teaspoon Salt
1/2 teaspoon Vanilla extract
4 cups Whipping cream or milk
To taste Dark rum
To taste Sweetened whipped cream
To taste Nutmeg

Combine powdered sugar, eggs, salt, and vanilla extract in a blender. Blend on high until well-blended.

Cook 2 cups of the whipping cream or milk in a 2-quart saucepan over medium heat until a thermometer registers 140 degrees Fahrenheit -- about 5-6 minutes.

While blending the egg mixture at medium speed, slowly pour in the warm whipping cream/milk. Continue to blend until the mixture is frothy -- about 15-20 seconds.

Pour the mixture back into the saucepan and and the remaining 2 cups whipping cream/milk. Cook over medium heat, stirring occasionally, until thermometer registers 140 degrees Fahrenheit -- about 5-6 minutes.

Add 1-2 tablespoons of dark rum to each serving. Top with sweetened whipped cream and dust with nutmeg.
Tip
Some people -- such as my mom -- prefer brandy to dark rum. Also, this will keep in the refrigerator for 2-3 days.
