Recipe for Rhode Island's Amaretto Muffins

Rhode Island's state muffin in this series is the Amaretto Muffin, flavored with amaretto liqueur and almonds. It starts with the Rich 'n' Sweet muffin recipe which can be found at:

RHODE ISLAND'S
AMARETTO MUFFINS

1 recipe Rich 'n' Sweet Muffins

1/2 cup amaretto liqueur

1/4 cup sliced almonds

Prepare muffin recipe as directed except decrease sugar to 1/3 cup. Decrease milk to 1/4 cup and add amaretto to milk.

Sprinkle tops with almonds just before baking.

Makes 1 dozen, about 135 calories each.

Tip: For a diffferent taste, try toasting an additional 1/4 cup almonds and add to muffin batter.
