These are the ingredients that you need to have and how they should be prepared prior to cooking.
1 cup of mung beans
3 cloves of garlic that is chopped into small pieces
1 medium onion that is chopped into small pieces
2 tomatoes that is cut into small pieces
½ tsp of black pepper
1 tsp of salt
8 oz of shrimp
4 oz of pork cut into small pieces
3 tbsp of olive oil
1 bundle of bitter melon leaves where each is cut about 3 to 4 inches in length
3 cups of water
Now that you have all your ingredients ready and prepared, let us go into the actual cooking.
1. The first thing you want to do is to boil the mung beans in the 3 cups of water. You will know it is finished when they start to float. When it is done, set it to the side.
2. Next you will want to get a pan and preheat it. Then add in the 3 tbsp of olive oil. Put in the chopped garlic and saute it. You will know it is finished when it turns a golden brown color.
3. Then put in the chopped onions and saute those for a couple of minutes.
4. Put in the tomatoes and saute those too for a short while.
5. Next add in the 4 oz of cut pork and saute it with the rest of the ingredients.
6. When you have finished with that task, put in the mung beans with the water and leave everything there to simmer for about 5 minutes.
7. When that time has passed, put in the 8 oz of shrimp, the 1 tsp of salt, the bitter melon leaves and the ½ tsp of black pepper. Let everything simmer for another 10 to 15 minutes. If you think your dish needs more water, you can add it here. After the time is up, turn the stove off and you are finished! It is now ready to be served.
