Recipe for a Spinach Macaroni and Cheese

Somewhat Healthy, but Delicious Mac & Cheese

Macaroni and cheese can be the main course of a meal, or a tasty side dish. This recipe is a great choice for a mom looking to entice her little ones to eat a little spinach and whole wheat. It can also make for a wonderful gourmet dish at a romantic, social or business dinner.

Recipe for Spinach Macaroni and Cheese

Serves 6 to 8

Ingredients:

1 standard size package of whole wheat macaroni shells
1 small bag of frozen spinach
1/2 cup of reduced fat cheddar cheese
1/2 cup of reduced fat Monterey Jack cheese
1/2 cup of reduced fat mozzarella cheese
2 tbsp of whole wheat flour
2 tbsp of low fat butter
2 cups of 1% milk

Optional ingredients:

1 package of crumbled feta cheese
1/2 cup of reduced fat cheddar cheese
1/2 tsp salt
1/2 tsp pepper
1/2 tsp of garlic powder

Directions:

1. Prepare macaroni in large pot according to package directions. Drain, rinse and set aside.
2. Preheat oven to 375 degrees.
3. Combine milk, butter and cheeses (use only 1/2 cup of cheddar cheese) over low heat in same large pot. Stir often.
4. Once cheese begins to melt, slowly add macaroni noodles to pot. Blend all ingredients well.
5. Add spinach and whole wheat flour. Season, blend and remove from heat.
6. Lightly grease a standard baking pan.
7. Slowly pour mixture into pan. Top with remaining cheddar cheese (optional, great for a more kid friend mac and cheese) or feta cheese (for a more adult/gourmet dish).
8. Bake uncovered for about 25-30 minutes.
