GRITS AND CHEDDAR MUFFINS
1 Recipe Basic Muffins
1/2 teaspoon black pepper
1 cup cooked grits
3/4 cup shredded sharp Cheddar cheese
Dash hot pepper sauce
Prepare muffin recipe as directed except decrease flour to 1 1/2 cups and sugar to 1 tablespoon. Increase salt to 3/4 teaspoon and butter or margarine to 6 tablespoons. Decrease milk to 1/2 cup.
Add black pepper to dry ingredients. Add grits, cheese and hot pepper sauce to liquid ingredients.
Makes 1 dozen, about 175 calories each.
