2 tablespoons White wine vinegar
1 tablespoon Sherry vinegar
3 Tomatoes
18-20 Fresh basil leaves, roughly chopped
Dash Sugar
To taste Kosher salt and cracked black pepper

Tip
Sweet basil does a lot to bring out the flavor of the tomatoes. In addition, the acidity of the vinegars blends well with the sweetness of the oils.
