Ingredients
2 8oz Tuna (Preferably Ahi Grade)
4 oz Tomatoes
4 oz Red Onions
1 oz Dried Parsley
1 Yellow Bell Pepper
Salt and Pepper
Flour
Ingredients for Lemon Butter:
1/2 cup of white wine
3 1/2 whole lemons peeled and cut in half.
11/2 teaspoon salt
1 teaspoon white pepper
11/2 cup heavy cream
1 pound of non salt butter sticks
1 Avocado (nice and soft)
Instructions
Lemon Butter
Heat pan on high and add the lemons, and white wine. Reduce about half way and then add the heavy cream, salt, and white pepper. Make sure you whisk consistently when placing heavy cream to pan. Simmer for about 5 minutes until boiling has occurred. Cut the butter into small cubes and add it to the pan slowly. Wisk until butter has completely melted. Immediately remove from pan and strain. Then add the sauce in the blender with the diced avocados. Blend for 1 minute until completely pureed.
The Tuna
Dust the Tuna in flour and sprinkle some salt and pepper and place it in a hot pan with some oil. Tuna is very good med rare to medium so cook to your preference.
The Topping
Sauté the tomato, julienne red onions, and julienne yellow peppers with some oil about 1-2 minutes. Turn off heat, cool for a minute, and add needed amount of Avocado Lemon Butter into pan. Simmer aggressively and make sure the pan is not so hot the lemon butter will break.
Finish
Now plate the Tuna with some white rice, steamed asparagus, or steamed vegetables. Top the fish off with some Avocado Lemon Butter. Sprinkle some parsley. Wow! Now that good eating! Remember you can always add some shrimp to the topping!
Tips: Julienne means to cut the vegetable in a long thin slice. Just like a chopstick.
Notes: Make sure the heavy cream is boiling when adding butter. Wisk until the butter has melted then remove from heat immediately.
