Recipe: Vegan Mock-egg Salad

I am a big fan of anything that has the word 'salad' after it; potato salad, macaroni salad, fruit salad, mock tuna salad. I am a huge fan of Vegenaise and will use just about any excuse to mix it with something and put it on bread. As I experimented with tofu, it dawned on me that I could make a 'salad' with tofu as well that would closely resemble egg salad. I tried it and was amazed. Here is my recipe:

Ingredients:1 block of firm tofu
2 tablespoons Vegenaise
3/4 tablespoon sweet pickle relish
2 green onions
1 teaspoon of garlic salt
1 teaspoon of lemon pepper
1/2 teaspoon of ground dry mustard
1/2 teaspoon of paprika

Instructions: Put the tofu in a bowl and crumble it with a fork (the same way you would if you were making a tofu scramble). When all the tofu is crumbled, add the Vegenaise and mix. Add the relish and the onion and mix. Add the rest of the seasonings and mix. Chill for 30 minutes so the flavors can blend and serve.
