Recipes to Make for 4th of July

American Potato Salad

small onion diced fine
1 small bunch of radishes, sliced thin and cut in quarters
3 stalks celery diced fine
Hellman's Mayonnaise
dash of celery seed
1/2 doz hard boiled eggs sliced
5 pounds red potatoes cooked till tender
salt & pepper to taste

Directions:

Boil potatoes until tender test with fork, then run cold water over them while peeling, won't need a knife
slice thin, then add mayonnaise mixed with milk (add the mayo, and then milk till gravy thickness) add salt and pepper, celery, radishes, celery seed and 5 of the sliced hard boiled eggs, to mixture. (when making mayo mix, use mayo depending on size of potato salad you are making) I usually use 1/2 to 3/4 jar, not the small jar, next size up. Then add potatoes slowly and kind of toss, keep adding until you have what you want, taste to see if you need more salt and pepper. Take last sliced hard boiled egg and lay them flat on top of potato salad for decoration.

Number Of Servings:Serves 6 to 10 depending on how much they eat
Preparation Time: about 1 to 2 hours

Pasta Salad

1 bag curly rigatoni pasta(cook rigatoni pasta until it is done)
1 cup shredded carrots
4 sticks celery chopped fine
3 green onions(chopped fine) put 1 or 2 inches of greens in for color
1 cup (your choice ham, turkey, or seafood
2 hard boiled eggs (chopped up)
1 tomato (chopped up)
1/2 cup sliced green + black olives
1 Bottle Henri's creamy Italian Dressing

Mix all together, salt + pepper to taste

Chill in refrigerator and then fill a larger bowl with ice and set your bowl of salad on top of the ice, stir occasionally to keep cold.

Strawberry Pie

1 pkg strawberry Flavor Jello (4 servings)- you can also use sugar free
2/3 cup boiling water
1/2 cup cold water
ice cubes
1 8 oz. container of Lite Cool Whip (also can use sugar free
1 cup chopped strawberries
1 graham cracker crust (can use reduced fat)
1 cup cliced fresh strawberries
blueberries

boil the 2/3 cup water then add boiling water to jello and mix for 2 minutes so the jello is dissolved. Add ice to jello water (1 cup), stir until jello is slightly thickened, remove excess ice.

Next add the cool whip and a wire whip, or gently fold into jello until well mixed, then add chopped strawberries. Refrigerate for 30 minutes until mixture is very thick and will heap when spooned in to crust. Then add to crust.

Refrigerate for 6 or more hours until firm. Top with sliced strawberries and blueberries. Cut and serve.

    hmmm, radishes in potato salad! I've never tried that before, sounds good. All of these recipes sound really good.
