There is a very special feeling involved in carrying on a family recipe, my mother was the best cook in the whole world i thought, she made everything from scratch, home made bread you could smell a mile away, my favorite is her cantaloupe pie.

Cantaloupe pie for diabetics, this is one delicious pie, my friend is diabetic, she loves her sweets, so that is when i started turning my recipes into healthy, but delicious recipes so every one i knew could enjoy the foods they thought they would never have again, so enjoy and stay healthy.

Cantaloupe Pie, 1 ripe cantaloupe cut into cubes, 2 boxes of sugar free vanilla pudding, use 2% milk, when pudding is done add cantaloupe to it, when the filling is cooled, pour into baked pie shell top with sugar free non fat cool whip. enjoy.

Chewy Chocolate Cookies, 2 cups self rising flour, 2 egg whites no yolks, 1/4 cup 100% veg. oil or canola oil, 2 tbs. non fat butter, 1 cup splenda artificial sweetener, 1/2 cup hershey's cocoa powder for baking, cocoa powder does not contain sugar, it is for baking, ice cold water, mix flour, egg whites, 1/4 cup oil, butter mix well as you go, add cocoa powder mix in well, add cold water a tbs. at a time until your cookie dough is of a slightly firm texture, should not be dry, but should not stick to your hands either, bake 10 min at oven temp. of 350, check often not to over cook for chewy cookies, if you like a little crispy just cook a little more, very good chocolate flavor, splenda makes recipes taste so good.

Fruit cobbler, your choice of fruit, fresh Fruit, or if in a can make sure there is no added sugar in lite syrup, for a 9 inch cake pan use about 6 apples, or as many for your cobbler as you need, usually 6 to 8, if using can fruit, you can use 1, but 2 lg. cans make it fuller, peel and slice fruit or pour out of can into a bowl, add 1 1/2 cups of splenda 2 tbs. cornstarch, if using peaches add 2 tsp. pumpkin pie spice or 1 tsp. nutmeg, 1/2 tsp. ground cloves, 1/2 tsp. cinnamon, mix well, set aside, make your cobbler dough, 2 cups self rising flour, 1/4 cup 100% veg. oil. stir those two together until your dough is crumbly, add 2 tbs. non fat butter keep working dough, add 1/4 cup of 2% milk work dough well, add cold milk as needed you want a loose dough kind of sticky, when done spoon on bottom of pan, pour fruit filling in, spoon rest of dough over top, rub a little non fat butter over top dough, bake at 425 for about 30 min or until golden brown, if you like a la mode use frozen sugar free yogurt or sugar free ice cream. enjoy.
