Easter Egg Salad Recipe
1 dozen leftover Easter eggs
1/8 cup chopped onion
1/8 cup sweet pickle relish
2 slices cooked crumbled bacon
2 tablespoons chopped pimento
1/2 cup salad dressing
2 tablespoons sugar
1 teaspoon lemon pepper
Peel the leftover Easter eggs, wash and dry them thoroughly. Chop the leftover Easter eggs into small pieces. Add the rest of the ingredients and mix well. Promptly refrigerate any leftovers. This Easter egg salad recipe is great served as a side dish or made into Easter egg salad sandwiches.
Deviled Easter Eggs Recipe
1 dozen leftover Easter eggs
1 teaspoon finely chopped onion
1 teaspoon pickle relish
2 tablespoons salad dressing
1 teaspoon mustard
1 teaspoon sugar
dash of paprika
Peel, wash and dry the leftover Easter eggs. Cut in half longways (from top to bottom). Scoop out the yolk from your leftover Easter eggs and put into a small mixing bowl. Place the leftover Easter egg whites to the side, on a serving platter.
Using a fork, mash up the leftover Easter egg yolk until all lumps are gone. Add to the mashed yolks the onion, relish, salad dressing, mustard and sugar. Mix the leftover Easter egg yolk mixture thoroughly.
Scoop up the yolk mixture with a teaspoon and place this mixture into the cavity that was left when you removed the yolk from the leftover Easter egg whites. Continue until all leftover Easter egg yolk mixture is used and all egg whites are filled. Sprinkle the Deviled Easter eggs with the paprika and enjoy!
Red Easter Eggs, Ham and Cheese Recipe
1 dozen leftover Easter eggs
1/2 cup cubed ham
1 can stewed tomatoes
1 cup of shredded cheese (any flavor)
1/2 small onion chopped
1 teaspoon Italian seasoning
salt and pepper to taste
Peel, wash and dry the leftover Easter eggs. Slice the leftover Easter eggs into 1/4 inch slices. Place the leftover Easter eggs, cubed ham, onions and tomatoes into an oven safe baking dish. Sprinkle the leftover Easter egg mixture with the Italian seasoning. Sprinkle the shredded cheese on top and bake in a 350 degree oven for about 30 minutes.
If these leftover Easter egg recipes aren't enough to use up all of those leftover Easter eggs here are a few other ideas.
1. Peel, wash and dry the leftover Easter egg. Chop into small pieces and sprinkle on salads.
2. Add the leftover Easter eggs into a potato salad.
3. Use the leftover Easter eggs in a pea salad.
If all else fails, just peel and eat the leftover Easter eggs with a little salt or my personal favorite hot sauce!
