Recipes for Making Soy Milk

1. Rinse ½ cups of soybean using cold water.

2. Soak the soybeans overnight in a bowl of cold water. Use just enough water to cover the soybeans. Do not use warm water.

3. Drain the water from the bowl and rinse the soybeans once again under cold water.

4. Grind the soybeans in just enough water. Continue the grinding process until a slurry is made.

5. Pour the slurry into a pot and add 1 quart of water. Cold water works best here, but warm water will not do much harm. Bring this mixture to a boil while stirring.

6. Let the mixture simmer for 20 minutes. Continue stirring during this time too.

7. Filter the slurry using a sieve. If you don't have a sieve you can use cheesecloth or a linen towel. The liquid should remain in the bowl since this is the soy milk. Discard the ground up beans.

8. The soy milk is now ready to be consumed. Store the soy milk in the refrigerator when not drinking.
