Featured recipes: Berffro Cakes and Pwdin Eryri (Snowdon Pudding)

Well, dear readers, this is the end of the series. So I thought why not end this on a sweet note and have some incredible yummies for our tummies!

Berffro Cakes
Ingredients: 1 oz sugar, 2 oz butter, and 3 oz flour

Mix well by hand; roll out fairly thin and cut into rounds. Bake in warm oven until golden brown and sprinkle with sugar.

Pwdin Eryri (Snowdon Pudding)

Ingredients: 8 oz suet, 6 eggs, 1 ½ oz cornflower (or rice), 6 oz brown sugar, 8 oz breadcrumbs, 4 oz raisins, 6 oz lemon marmalade, grated rind of 2 lemons and a pinch of salt

Mix all the dry ingredients (hold back a handful of raisins), beat the eggs and then add. Pour into greased basin, in which the remaining raisins have been spread. Cover and boil for 1 ½ hours. Serve with white sauce or a wine sauce that is made as follows: Boil 1 ½ oz of sugar and the rind of ½ lemon in about a wineglass full of water for about 15 minutes and then remove the rind. Beat about ½ a teaspoon of flour into an ounce of butter and stir into the water. Add a glass and a half full of sherry, Madeira or white wine and serve this really hot over the pudding. Heaven!
