Ingredients

Serves 4
2 - 3 lbs Chicken - cut into parts
4 bottles Beer - dark or full-bodied lager
2 Yellow Onion - medium or large - sliced
6 Jalapeno Peppers - sliced
3 Tomatoes - medium - sliced in chunks
1 cup Flour
2 tbsp Chili Powder
2 tbsp Garlic Powder
2 tbsp Black Pepper
2 tbsp Paprika
2 tbsp Salt
1 cup Vegetable Oil

Directions for Redneck Drunken Chicken

Mix Flour and Dry Seasonings
Combine chili powder, garlic powder, black pepper, paprika and salt in a bowl to create what chef's call a "seasoned" flour

Coat Chicken Pieces In Seasoned Flour and Brown In Frying Pan
Toss chicken pieces in the flour mixture and then fry in pan with vegetable oil over medium heat for about 5 minutes until golden brown (that's about 2 minutes on each side). Just lightly "brown" the chicken ... don't cook it .

Pour Beer, Chicken, Onions, Tomatoes and Jalapenos Into A Baking Dish
Pour 3 bottles of beer into a baking dish. Add the chicken and the tomatoes, onions and jalapeno peppers.

Bake In A Pre-Heated 350 Degree Oven For 30 - 40 Minutes
Bake for 30 - 40 minutes in a pre-heated 350 degree oven. Enjoy a beer or two while you're waiting

Enjoy the chicken with some chili and a glass of your favorite beer!
Tip
The cook must drink at least 1 bottle of beer ... and leave three for the recipe. Helpful HInt: Start with a 6 pack of beer ... 3 for the recipe and three for the cook
