Ingredients

Serves 1
2 slices Bread - white or rye
2 - 4 slices Cheddar Cheese - thin slices
2 slices Jalapeno Jack Cheese - thin slices
2 Spam - thin slices
4 slices Bacon - cooked
2 slices Bologna - thin slices
1 tsp Mayonnaise
1 tsp catsup
2 tbsp butter
4 dashes hot sauce

Directions for Redneck Grilled Cheese Sandwich

Build Bottom Side of Sandwich
Spread the mayonnaise bottom inside slice of the bread. Add the two slices of cheddar cheese followed by the 2 slices spam, followed by the 4 strips of bacon followed by the 2 slices of bologna. Sprinkle with s few dashes of hot sauce.

Build Top Side of Sandwich
Spread the catsup on the top inside of the bread. Add 2 slices of the jalapeno jack cheese.

Assemble ... Butter The Outside of Bread ... and Cook In Frying Pan
Place the top slice of bread on the bottom to finish building the sandwich. Lightly spread butter on both outer sides of the sandwich. Place sandwich in a pre-heated frying pan over medium heat. Cook on one side for about 1- 1 1/2 minutes until cheese starts to melt. Flip sandwich in pan. The first side should be toasted to a light golden brown. Cook on the second side about 1 more minute until the cheese is melted and the bread is a light golden brown.

Eat and Enjoy
Great to eat by itself with a beer or two ... or with a side of chili or french fries.
Tip
A bowl of chili goes great with it, and of course, a bottle of cold brew to wash it down.
