a Luxurious Hotel with One of the World's Finest Restaurant
Relais Bernard Loiseau, once known as La Cote D'Or, is located in the middle of downtown Saulieu, Burgundy, the heart of winemaking of not only that full-bodied red, but also excellent Chablis. It's only about two hours from Paris and close to the city of Dijon. It's also been known as a perfect stop on the way to the French Alps. The hotel was originally a roadside post host dating back to the Middle Ages and has transformed into a glamorous estate. Through the years it has received visits from such well-known figures as Napoleon, Salvador Dali and Charlie Chaplin.
This Relais & Chateaux property lives up to its status with beautiful suites with warm fireplaces, a full service spa, an inviting library, a billiards room and a heated swimming pool within the perfectly landscaped grounds and gardens. There is also a children's play room downstairs. Even though there are only 32 rooms here, a staff of 60 takes care of your every need.
Bernard Loiseau began managing the hotel in 1975 and took ownership of the property in 1982. Since his arrival, this well-known chef put an emphasis on the restaurant, making it known throughout France. After Bernard Loiseau's suicide in 2003, Patrick Bertron, who had been working by Loiseau's side at the time of his death, took over as head chef and Dominique Loiseau took charge of the five-star hotel.
The restaurant continued to flourish and earned its third star in the Michelen Guide - the highest a restaurant can receive - under Bertron. His dishes focus on every details, from perfect Fois Gras to decadent desserts. The hotel is also has a breakfast room with a menu dedicated to Chef Alexandre Dumaine. It is a bit more casual, but the menu is just as French and inviting as the main restaurant. Next door to the hotel you will find La Boutique Bernard Loiseau, where you can pick up all sorts of gourmet foods and unique gifts.
