Restaurant Kitchen Secrets

There are so many things that are going on in the kitchen. High volume restaurants do millions of dollars in sales a year. Mistakes are made things do happen. Some things are meant to be a secret and never be revealed to a customer. However, after so must concerns the secret is now revealed for you knowledge. Next time you decide to go to a restaurant keep this in mind.

Closing Time
You are running late to go eat at a restaurant but you make it there 15 minutes before closing. The cooks have been working all day and the Chef has a lot of paper work to complete. The cooks are tired and already started to clean the kitchen and restocking the food back to the refrigerator. Chemical are all over the equipment and they start to prepare your food. If you get lucky maybe they will not microwave it.

Order is Wrong
Most kitchens are small so that they can use the extra space to put more tables in the dining room. The kitchen is probably working at it max capacity. Do not send your order that came out wrong. They may be tampered with. In example like you ask for no butter or spice. They simply just throw it in some boiling water. If you did not want cheese on a burger they simply just scrap off the cheese and flip the burger over. Be careful if you have allergies let the manager know immediately.

Monday Dining
Mondays are the worst time to go out to eat. Chefs order a bulk amount of orders to last them through the weekend. There are no deliveries on weekends. They also prep and make all the necessary soups and food for the weekend also. That means all the product that is served on Mondays is usually 3-4 days old. Well if you enjoy seafood that will be a stale taste go ahead enjoy the Monday dining.

Fried Food
You wanted some fried food and your friend orders a well done steak. Kiss the crispy fresh good bye. When a kitchen is running at maximum capacity such as on weekends they will not time your tickets. Whatever comes in is being made as soon as it is turned in. Your fried food will go and sit in the heat lamp until your friend's steak is done.

    As a old General Manager at lots of restaurants I can say most of what he said is true. I know we hated when people came in the last 15 minutes but you have to serve them and make sure their order is correct. I never cut corners on orders no matter what time it was. I have been out in the parking lot and people ask me what time we close and when I say in 5 minutes I still invited them in. I use to fight with the owner of one restaurant because of the way he treated employees. He seemed to think you could not be nice to your employees and run an effective restaurant in my opinion the nicer you are the more they are willing to do.
