Reverse Stuffed Peppers

Whew! It seems that as life goes on, there's always more to do and many of us find ourselves so busy that there's barely anytime left to make a good home-cooked meal. This is my recipe for an old family favorite, but reversed, and in much less time, not to mention that it's healthy.

Ingredients:
1 - 1 1/2 pound of lean ground turkey
2 bags of Success Boil-In-Bag white rice
2 cans of Campbell's tomato soup
2 green bell peppers (or other colors to mix it up)
worcestershire sauce

Start by cooking the white rice in a pot of boiling water, which should take about 10 minutes. While waiting for the rice to cook, cut the peppers in 1 by 1 inch pieces and start them cooking in a separate pot of boiling water for about 10 minutes. After both ingredients have cooked, drain the water from each pot & set aside.

In a separate skillet, brown the ground turkey until cooked all the way through. Add the 2 cans of tomato soup and cook for a few minutes. At this point, add the white rice and green peppers to the skillet, stirring everything together. For an extra kick in taste, add a few splashes of worcestershire sauce (I personally love Lea & Perrins), and cook just a few more minutes together while stirring. Then...you're done! A great addition to this dish if you're looking for a little more spice would be some A1 steak sauce, but I think you'll find that it has just enough taste on it's own.

This meal proves that you can get some healthy home-cooking done in about 20 minutes. It should also be enough to feed a family of 5. Bon apetite!
