Being married to a diabetic keeps me searching for tasty foods that he can enjoy without raising his blood sugar level. One of our favorite breakfast treats is pancakes, but most of the low carb pancake mixes we've tried in the past were lacking in both flavor and texture. I've found that when low carb products fail to deliver good flavor and texture, my husband tends to want the real pancake mix, which contains considerably more sugars and other carbohydrates than any diabetic should consume.

Recently I came across an all natural, sugar-free pancake and waffle mix made by Maple Grove Farms of Vermont. We have used Maple Grove Farms sugar free pancake syrup many times and I was pleased to find that they also make a sugar free pancake and waffle mix.

The first batch of pancakes I mixed up according to package directions and they cooked up beautifully. However, they were just a little thicker than we like our pancakes. So, the second batch I made, I used only one egg instead of the two eggs called for in the recipe on the package. I also used equal parts water and pancake mix and added a teaspoon of vanilla extract for extra flavor. The pancake mix is easy to tweak so you can bake up pancakes or waffles to your desired size, thickness and flavor.

This product is quite good and since it contains no sugar, you can add whatever sugar substitute you like. We also like to top them off with organic, low carb peanut butter or fresh blueberries and chopped pecans for an extra treat.

15 grams protein

No Trans-fats
2.5 grams total fat

    This is sugarfree but it is HIGH IN CALORIES and CARBS. The front of the box even says "Not a low calorie food." Boy, are they right! One serving - which is ONE SMALL PANCAKE- consists of 1/4 cup dry mix (egg and oil added) which makes 1/4 cup of batter, and it has 180 calories. The MIX for ONE SMALL PANCAKE (without eggs and oil) has 11 carbs. Further trickery: The instructions say to use one cup of mix to make 6 pancakes....it does not say how to prepare ONE SERVING - which is ONE PANCAKE. Very deceitful. The pancakes were OK but not worth the price. Diabetics: carbs turn into sugar. Beware. This might be "sugarfree" but carbs most assuredly turn into sugar!

    I used the sugar free pancake mix in place of flour using about 1/3 less than regular flour and the baked product came out very good.

    Maple Grove farms makes the best sugar free pancakes in the business.This is as close to Bisquick made pancakes you are gonna get in a sugar free product.
